Mediterranean Chicken Salad Sandwich


Sliced cucumber ½ cup

Lemon juice ¼ cup

Red Onion sliced ¼ cup

Greek yogurt 1/cup

Crushed garlic ½ tsp

Shredded Rotisserie chicken 2 cups

Kalamata Olives Feta ½ cup

Mint   2 sprigs

Feta ¼ cup

Pita Bread cut in half

Directions:  in a mixing bowl combine cucumber, onions, lemon juice, garlic, feta, Greek yogurt and olives and blend together. Add Rotisserie Chicken and coat with the yogurt veggie mix. Open the Pita Pocket and place mixture inside Pita.  Garnish with mint. Serve and enjoy


Pear Garlic Roasted Chicken


Chicken Breast

Garlic infused olive oil

Anjou Pear vinegar

Crushed Garlic

Mediterranean seasoning


Directions:  Bake the chicken to 165 degrees in oven

Place the Garlic olive oil in a skillet and heat. Place chicken breast in the skillet and sear on both sides. Add crushed garlic to the pan. Add Rosemary and pear vinegar and Sautee on low heat. Garnish with Mediterranean seasoning and serve.



Easy Chicken Stroganoff


½ cup butter

20oz skinless boneless chicken breast

Mushrooms (fresh) ½ cup

Yellow Onion Chopped ¼ cup

Salt1- teaspoon or to taste

Pepper1-  tablespoon or to taste

1 cup chicken broth

½ cup sour cream


Cook the chicken breast and dice into bite size pieces

Place mushrooms, onions and butter in a skillet and Sautee. Add chicken to skillet and Sautee with veggies. Lower heat and add chicken broth. Slowly bend in sour cream. Salt and pepper to taste and serve.
